For the Cake

  • 1 cup unsalted butter, softened Make sure it is at room temperature.
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 4 large eggs Room temperature.
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Sifted.
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup sour cream Room temperature.
  • 1 cup butterscotch chips Fold in gently.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
  • Fold in the butterscotch chips gently, ensuring even distribution throughout the batter.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
