Ingredients
  

Main Ingredients

  • 1.5 lbs Chicken breasts or thighs Use bone-in for added flavor.
  • 1 cup Rice
  • 3 cups Chicken broth

Tzatziki Sauce Ingredients

  • 1 cup Greek yogurt
  • 1 Cucumber, grated
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh dill
  • 2 tbsp Lemon juice

Seasoning

  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a casserole dish to prevent sticking.
  • Spread rice evenly across the bottom of the dish.
  • Lay chicken over the rice and sprinkle with salt and pepper.
  • In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice. Mix well.
  • Spoon the tzatziki sauce generously over the chicken.
  • Pour chicken broth over everything.
  • Cover the dish tightly with foil.

Cooking

  • Bake in the preheated oven for about 45 to 50 minutes until the chicken is cooked through and rice is fluffy.

Serving

  • Carefully remove the foil and gently stir to mix the tzatziki and rice together.
  • Serve hot, garnished with additional dill or cucumber if desired.

Notes

Allow casserole to rest for about 5 to 10 minutes before serving to meld flavors. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
