Instructions
Preheat oven to 350°F (175°C).
Brown the ground beef and onions in a skillet with garlic powder, salt, and pepper until fully cooked. Drain excess fat.
In a large bowl, combine cooked beef mixture, cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Stir well.
Lightly crush the Doritos chips, keeping some larger chunks for crunch.
In a greased casserole dish, layer half the crushed Doritos. Spread beef and creamy mixture over the chips. Sprinkle diced tomatoes if using.
Top with remaining crushed Doritos and sprinkle remaining cheddar cheese on top.
Bake for 20-25 minutes until cheese is bubbly and edges are crispy.
Let casserole rest 5-10 minutes before serving.
Notes
Feel free to swap the creamy soup base or add extra cheese just before baking for a golden crust.
