Instructions
Preheat your oven to 350°F (175°C) and spray a medium to large casserole dish with nonstick cooking spray.
In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, drained Rotel, and drained corn. Stir until uniform.
Mix in 1 cup of shredded Colby jack cheese into the mixture.
Spread the mixture evenly into the prepared casserole dish.
Top with the remaining cup of shredded cheese, then sprinkle crushed Dorito chips on top.
Bake for about 15 minutes, until the cheese is melted and the casserole is bubbly.
Let it rest for about 5 minutes before serving.
