Dirty Rice with Ground Beef

Ingredients
  

For the main dish

  • 1 pound ground beef Can substitute with turkey or chicken for a leaner option.
  • 1 cup uncooked long-grain rice Soaking for 30 minutes can yield fluffier rice.
  • 2 cups beef broth Adjust for moisture preference.
  • 1 medium onion, chopped Cooking longer can caramelize for sweetness.
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper Optional for heat.
  • to taste salt and pepper
  • 2 tablespoons vegetable oil
  • 1 cup chopped green onions for garnish Add just before serving.

Instructions
 

Cooking

  • Heat the vegetable oil in a large skillet over medium heat.
  • Add the chopped onion, green bell pepper, and celery to the skillet. Sauté until softened, about 5-7 minutes.
  • Stir in minced garlic and sauté for another minute until fragrant.
  • Push the vegetables to the side and add the ground beef. Cook until browned, breaking it apart as it cooks.
  • Mix the vegetables back in with the browned meat.
  • Season with paprika, thyme, onion powder, garlic powder, cayenne (if using), salt, and pepper.
  • Add the uncooked rice and stir to combine with the meat and vegetables.
  • Pour in beef broth and bring the mixture to a boil.
  • Cover the skillet, reduce heat to low, and let simmer for about 20-25 minutes, or until the rice is tender.
  • Remove from heat and let sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
