Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Tacos

  • 1 cup dill pickles, chopped
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 8 small tortillas
  • optional Fresh dill for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes. Once cooled slightly, shred the chicken into bite-sized pieces.
  • In a mixing bowl, combine the shredded chicken, chopped dill pickles, and ranch dressing. Mix until well combined.

Assembly and Baking

  • Place the tortillas on a baking sheet.
  • Sprinkle shredded cheddar cheese evenly over the tortillas.
  • Divide the chicken mixture among the cheese-covered tortillas.
  • Bake in the preheated oven for 10-12 minutes, or until the cheese is bubbling and the tortillas are crispy.
  • Carefully remove the baking sheet from the oven and let the tacos cool for a minute before serving.
