Ingredients
  

Chicken and Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup dill pickle juice For marinating the chicken

Coating

  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil For brushing the chicken

Garnish

  • to taste Fresh dill Optional for garnish

Preparation

  • Marinate the chicken breasts in dill pickle juice for at least 30 minutes.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, black pepper, and paprika until well combined.
  • Remove the chicken from the pickle juice, letting excess liquid drip off.
  • Brush each breast lightly with olive oil.
  • Dredge each chicken breast in the breadcrumb mixture, coating evenly.
  • Place the coated chicken breasts on the prepared baking sheet.

Cooking

  • Bake for 25-30 minutes until cooked through and golden brown, with an internal temperature of 165°F (75°C).
  • Let the chicken rest for a few minutes before garnishing with fresh dill.

Notes

For maximum flavor, consider marinating the chicken for a few hours or overnight. Press breadcrumbs firmly onto the chicken to ensure a crispy crust. Alternative breading options include whole wheat breadcrumbs or almond flour.
