Ingredients
  

Dipping Ingredients

  • 3 cups corn kernels (fresh, frozen, or canned) Roast corn for enhanced flavor.
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup crumbled cotija or feta cheese Cotija for authenticity; feta is a good substitute.
  • ½ cup shredded cheddar cheese
  • 1 tablespoon lime juice Freshly squeezed for best flavor.
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • to taste Salt and pepper Adjust according to flavor preference.

Instructions
 

Roasting Corn

  • Heat a skillet over medium heat and add the corn kernels. Roast for about 5 to 7 minutes, stirring occasionally, until golden and slightly charred. Alternatively, preheat the oven to 400°F and roast corn on a baking sheet for 15 to 20 minutes.

Mixing the Dip

  • In a large mixing bowl, combine mayonnaise, sour cream, cotija or feta, and cheddar cheese.
  • Add roasted corn and mix until well combined.

Seasoning

  • Add lime juice, chili powder, smoked paprika, garlic powder, cumin, and adjust seasoning with salt and pepper to taste. Stir until evenly blended.

Serving

  • Transfer to a serving dish and garnish with fresh cilantro and additional crumbled cotija cheese. Serve with tortilla chips, fresh veggies, or use as a topping for tacos or grilled chicken.

Notes
