Ingredients
  

  • 1/3 cup special dark cocoa powder
  • 3/4 cup sugar
  • 1/8 teaspoon kosher salt
  • 1 1/2 cups heavy cream
  • 1/2 cup dark or bittersweet chocolate chips at least 60% cacao
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large saucepan, whisk together cocoa powder, sugar, and kosher salt until combined.
  • Add heavy cream and heat over medium heat, stirring constantly until the mixture starts to steam.
  • Remove from heat and stir in dark chocolate chips until fully melted.
  • Stir in milk and vanilla extract. Allow the mixture to cool to room temperature.
  • Chill the mixture in the refrigerator for at least 4 hours or overnight.
  • Process the chilled mixture in your ice cream maker according to the manufacturer's instructions.
  • If you prefer soft-serve, serve immediately. Otherwise, transfer to a freezer-safe container and freeze until firm.
