  • 2 pounds Chicken Breasts Slice lengthwise for quicker cooking
  • Salt to taste
  • Pepper to taste
  • 1 cup All-Purpose Flour Substitute with gluten-free flour if needed
  • 1 large Egg Beat until smooth for even coverage
  • 1 cup Panko Bread Crumbs Regular breadcrumbs can be used if needed
  • 1/2 cup Grated Romano Cheese Feel free to swap with Parmesan
  • 2 tablespoons Fresh Parsley Optional, but highly recommended
  • 1 tablespoon Lemon Zest Fresh lemon juice is a nice alternative
  • 1/4 cup Avocado Oil or Olive Oil Remember, olive oil has a lower smoke point
  • 1 cup Shredded Mozzarella Cheese Provolone is another tasty option

Instructions
 

Preparation

  • Slice the chicken breasts lengthwise to ensure they cook quickly and evenly. Season generously with salt and pepper on both sides.
  • Set up the dredging station: in one bowl, add all-purpose flour; in another, beat the egg until smooth; in a third bowl, combine panko breadcrumbs, grated Romano cheese, and lemon zest.
  • Chop parsley finely and mix it into the breadcrumb mixture if using.

Coating Chicken

  • Dip one piece of chicken into flour, coating it evenly and shaking off excess.
  • Move the chicken into the beaten egg, ensuring it is well covered.
  • Transfer the chicken to the breadcrumb mixture, pressing down lightly to adhere the breadcrumbs.

Cooking

  • In a large skillet, heat oil over medium heat. Once hot, add coated chicken pieces carefully and cook for about 5-7 minutes per side, until golden brown and cooked through.
  • Check doneness with a meat thermometer, it should read 165°F.
  • Remove the chicken from the skillet and place it on a paper towel to drain excess oil.

Baking

  • Preheat the oven to 350°F. Place cooked chicken on a baking sheet and top each piece with shredded mozzarella cheese.
  • Bake for about 10 minutes or until cheese is melted and bubbly.
  • Garnish with additional parsley before serving.

Notes
