  • 1 whole whole chicken Choose a quality chicken for the best results.
  • 1 tablespoon olive oil Adds healthy fats and helps seasonings stick.
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 whole lemon, halved Adds brightness and acidity.

Preparation

  • Start by removing the chicken from its packaging and patting it dry with paper towels.
  • Drizzle the olive oil over the chicken.
  • In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika. Rub this spice mixture all over the chicken.
  • Squeeze the lemon juice over the chicken and place the squeezed halves inside the chicken’s cavity.
  • If using fresh herbs, stuff them into the cavity.

Cooking

  • Place the seasoned chicken in the crockpot. Cover with the lid and set the cooker to the low setting.
  • Let it cook for about 6 to 7 hours, until the juices run clear and the meat pulls away from the bone easily.

Serving

  • Carefully remove the chicken from the crockpot using tongs and allow it to rest for a few minutes before carving.
