  • 1 lb boneless, skinless chicken breasts Use high-quality chicken for the best flavor.
  • 1 can 15 oz white beans, drained and rinsed These add creaminess and protein.
  • 1 can 4 oz diced green chiles Adds mild heat.
  • 1 cup chicken broth For moisture and richness.
  • 1 medium onion, chopped Aromatic for flavor.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 tsp cumin For warmth and earthiness.
  • 1 tsp chili powder Adds depth to the flavor.
  • Salt and pepper, to taste Adjust according to preference.

Toppings

  • 1 cup shredded cheese For topping.
  • 1 whole avocado, sliced Creamy contrast to the chili.
  • Tortilla chips For serving or topping.

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the base of the crockpot.
  • Add the drained and rinsed white beans on top of the chicken.
  • Pour the can of diced green chiles into the pot, followed by the cup of chicken broth.
  • Add the chopped onion and minced garlic.
  • Sprinkle in the cumin and chili powder, then add salt and pepper to taste.
  • Stir everything together to ensure well combined.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • When done, shred the chicken in the crockpot using two forks, mixing it back into the chili.

Serving

  • Ladle the chili into bowls and top with shredded cheese and avocado.
  • Serve with tortilla chips on the side for dipping or crumbling on top.

Notes

For a thicker chili, mash some of the beans before adding to the pot. Feel free to add corn or bell peppers for variety.
