  • 2 cans white beans (such as cannellini or great northern), drained and rinsed
  • 1 can diced green chiles
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth

Spices

  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste Adjust according to preference

  • Shredded cheese For topping
  • Avocado Diced for topping

Preparation

  • Start by placing the chicken breasts at the bottom of your slow cooker.
  • Add the drained white beans.
  • Incorporate the diced green chiles, diced onion, and minced garlic.
  • Pour in the chicken broth.
  • Sprinkle in the cumin and chili powder. Season with salt and pepper according to your taste.
  • Gently stir everything to combine and then cover the slow cooker with its lid.

Cooking

  • If cooking on low, let it go for about 6-8 hours. For a quicker option, cook it on high for 3-4 hours.
  • Once cooking time is up, shred the chicken right in the broth using two forks.

Serving

  • Scoop the chili into bowls and offer toppings like shredded cheese, diced avocado, and tortilla chips.

Notes

For a thicker chili, consider mashing some of the beans against the side of the crockpot after cooking. Customize spice levels and toppings to suit your tastes.
