Ingredients
  

For the Soup Base

  • 1 pound beef stew meat Opt for well-marbled cuts for tenderness
  • 4 cups beef broth Can be substituted with vegetable broth for a lighter version
  • 2 cups diced vegetables (such as carrots, celery, bell peppers, and potatoes) Customize with your favorite vegetables
  • 1 can (14.5 oz) diced tomatoes Adds depth to the flavor
  • 1 medium onion, diced
  • 2 cloves garlic, minced Enhances flavor when sautéed
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Adjust to personal preference

Instructions
 

Preparation

  • Place the beef stew meat into your crockpot and season with salt, pepper, and dried thyme.
  • Chop the vegetables (carrots, celery, bell peppers, and potatoes) and place them in the crockpot on top of the beef.
  • Open the can of diced tomatoes and pour it into the crockpot.
  • Dice the onion and mince the garlic. Sauté them in a small pan until fragrant before adding to the crockpot.
  • Carefully add the beef broth to the crockpot and stir to combine all ingredients.

Cooking

  • Cover the crockpot with its lid and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Once cooking is complete, taste the soup and adjust seasoning with salt and pepper as needed.

Notes

For added flavor, consider caramelizing onions and browning the beef before adding them to the crockpot. You can also customize the soup with additional vegetables or spices to suit your taste.
