Main Ingredients

  • 1 pound beef stew meat, cut into chunks Use cuts like chuck roast for optimal tenderness.
  • 4 cups beef broth You may opt for low-sodium broth.
  • 2 cups chopped vegetables (such as carrots, celery, potatoes, and green beans) You can vary the vegetables based on what you have.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz) Use with juices for added flavor.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Add to taste.

Preparation

  • Wash, peel, and chop all vegetables.
  • Cut the beef stew meat into bite-sized chunks.

Cooking

  • In your crockpot, add the beef stew meat and pour in the beef broth.
  • Add chopped vegetables, onion, and garlic into the crockpot.
  • Add diced tomatoes, Worcestershire sauce, Italian seasoning, salt, and pepper.
  • Stir well to combine all ingredients.
  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • After cooking, check that the beef is tender and the vegetables are cooked.

Serving

  • Ladle the soup into bowls and serve hot.
  • Garnish with chopped parsley or cheese, if desired.
