Ingredients
  

Main Ingredients

  • 1 lb ground beef Browned in a skillet
  • 1 package taco seasoning For flavoring
  • 2 cups pasta (e.g., rotini or penne) Uncooked
  • 1 can black beans Drained and rinsed
  • 1 can diced tomatoes Undrained
  • 1 cup corn Frozen or canned
  • 3 cups beef broth or water For cooking
  • 2 cups shredded cheese (e.g., cheddar, Monterey Jack) Added towards the end
  • to taste Salt and pepper Adjust according to preference

Preparation

  • Brown the ground beef in a skillet over medium heat, then drain any excess fat.
  • Transfer the browned beef to the crockpot.
  • Add taco seasoning to the crockpot.
  • In the same crockpot, add the uncooked pasta, black beans, diced tomatoes (with juice), corn, and beef broth.
  • Gently stir all ingredients together to combine evenly.

Cooking

  • Set the crockpot to cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  • About 30 minutes before serving, add shredded cheese and stir well until melted.

Serving

  • Scoop the pasta into bowls and add optional toppings like sour cream, cilantro, jalapeños, or avocado.

Notes
