Main Ingredients

  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 package taco seasoning Adjust to taste.
  • 1 cup shredded cheese Reserve half for topping.
  • 1 cup tortilla chips Crushed for topping.

For Serving

  • to taste sour cream For serving.
  • to taste chopped green onions For serving.

Preparation

  • Brown the ground beef in a skillet over medium heat, breaking it up with a wooden spoon until fully cooked.
  • Drain any excess fat from the cooked beef.
  • Transfer the cooked beef into your crockpot.
  • Add the drained black beans, corn, and the can of diced tomatoes with green chilies.
  • Sprinkle the taco seasoning over the mixture and mix thoroughly.

Cooking

  • Set the crockpot to low and cook for 4 to 6 hours.
  • About 30 minutes before serving, stir in half of the shredded cheese.

Serving

  • Serve in bowls, layering with the meat and bean mixture, crushed tortilla chips, remaining shredded cheese, and topping with sour cream and chopped green onions.

Notes
