  • 1 cup rice Uncooked; can substitute with brown rice or quinoa.
  • 1 can diced tomatoes Adds moisture and flavor to the casserole.
  • 2 cups beef broth For cooking the rice.
  • 1 tablespoon Italian seasoning Adjust according to taste.
  • to taste Salt and pepper Season according to preference.

Preparation

  • Brown the ground beef in a skillet over medium heat, draining any excess fat.
  • Combine the browned beef, chopped bell peppers, uncooked rice, diced tomatoes, and beef broth in the crockpot.
  • Add Italian seasoning, salt, and pepper, then mix well.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the rice is tender.

Serving

  • Scoop portions from the crockpot and serve. Optional: sprinkle with cheese or garnish with fresh herbs.

Notes
