  • 1 lb sausage (your choice) Choose high-quality sausage for better flavor.
  • 4 medium potatoes, diced Cut into uniform sizes for even cooking.
  • 1 medium onion, chopped Enhances the flavor as it cooks.
  • 1 tablespoon olive oil Adds richness to the dish.
  • to taste Salt and pepper Season generously.
  • optional herbs (such as thyme or rosemary) Customize flavors to your liking.

Instructions
 

Preparation

  • Prepare the crockpot for cooking.
  • Place the diced potatoes at the bottom of the crockpot.
  • Chop the onion and sprinkle it on top of the potatoes.
  • Slice the sausage into bite-sized pieces and add to the crockpot.
  • Drizzle olive oil over the top and season with salt and pepper.
  • If using herbs, sprinkle them on as well.
  • Gently stir the mixture to combine all flavors.

Cooking

  • Cover the crockpot and set to cook for 6 to 8 hours on low, or 3 to 4 hours on high.
  • Check for doneness, ensuring the potatoes are tender and the sausage is thoroughly cooked.
