  • 2 pounds chicken breasts or thighs (boneless, skinless)
  • 1 ounce packet of taco seasoning about 1 ounce
  • 1 cup salsa (your favorite variety)
  • 1 juice juice of 1 lime
  • 1/4 cup fresh cilantro (chopped)

Preparation

  • Begin by spraying your slow cooker with a bit of non-stick cooking spray.
  • Place the boneless, skinless chicken breasts or thighs into the slow cooker in a single layer.
  • Sprinkle the taco seasoning evenly over the chicken.
  • Pour one cup of your favorite salsa over the seasoned chicken.
  • Squeeze the juice of one lime over the salsa and chicken, then sprinkle the chopped cilantro on top.
  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  • Once done, check that the chicken reaches an internal temperature of 165°F, then shred it in the slow cooker with two forks.
