Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts into the crockpot. Frozen chicken can be used without thawing.
  • Pour the cup of salsa over the chicken, ensuring all the chicken is coated.
  • Sprinkle the taco seasoning evenly over the chicken and salsa mix.
  • If using, add the black beans and corn.

Cooking

  • Cover the crockpot and set to cook on low for 6-8 hours or on high for 3-4 hours.
  • Check the chicken for tenderness; it should shred easily with two forks.
  • Shred the chicken right in the crockpot, mixing it thoroughly with the salsa.

Serving

  • Serve the chicken with tortillas, in burritos, or over rice.
