Preparation
- Place the boneless, skinless chicken breasts into the crockpot. Frozen chicken can be used without thawing.
- Pour the cup of salsa over the chicken, ensuring all the chicken is coated.
- Sprinkle the taco seasoning evenly over the chicken and salsa mix.
- If using, add the black beans and corn.
Cooking
- Cover the crockpot and set to cook on low for 6-8 hours or on high for 3-4 hours.
- Check the chicken for tenderness; it should shred easily with two forks.
- Shred the chicken right in the crockpot, mixing it thoroughly with the salsa.
Serving
- Serve the chicken with tortillas, in burritos, or over rice.
