  • 4 pieces boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1 piece bell pepper, sliced any color you prefer
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped for garnish
  • to taste grated Parmesan cheese optional for serving

Instructions
 

Preparation

  • Place the boneless chicken breasts at the bottom of the crockpot, forming an even layer.
  • Add the sliced bell pepper and chopped onion over the chicken.
  • In a separate bowl, combine the marinara sauce, minced garlic, oregano, basil, salt, and black pepper. Mix well.
  • Pour the sauce mixture over the chicken and vegetables, ensuring the chicken is well coated.
  • Cover the crockpot and set it to low for 6 to 8 hours or high for 3 to 4 hours.
  • Check the chicken's internal temperature after cooking to ensure it reaches at least 165°F (75°C).

Serving

  • Once done, shred the chicken with two forks directly in the crockpot and stir everything to mix.
  • Serve over cooked spaghetti, in a sub roll, or with rice/quinoa, and garnish with parsley and Parmesan cheese.

Notes

For added flavor, sauté the vegetables before adding them to the crockpot. You can use bone-in chicken for richer flavor, and experiment with different sauces or spices as desired.
