Ingredients
  

Main ingredients

  • 2.5 to 3 pounds boneless beef chuck pot roast Trim excess fat before cooking.
  • 2 teaspoons garlic powder
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable or canola oil For browning the roast.
  • 14.5 ounces beef broth
  • 1 ounce Italian dry salad dressing mix
  • 1 teaspoon onion salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 16 ounces jar sliced pepperoncini peppers, drained Save ½ cup of the juice.
  • ½ cup pepperoncini juice Reserved juice from the peppers.
  • 8 hoagie buns or rolls, split and toasted
  • 2 cups shredded mozzarella cheese For topping the sandwiches.

Instructions
 

Preparation

  • Start by trimming excess fat from the chuck roast to keep the final dish from getting too greasy.
  • Season the roast liberally with garlic powder and freshly ground black pepper.
  • In a Dutch oven, heat the vegetable or canola oil over medium-high heat, and brown the roast on all sides.
  • Transfer the browned roast to your crockpot.
  • In a medium bowl, whisk together the beef broth, Italian dry salad dressing mix, onion salt, oregano, basil, and parsley.
  • Pour the mixture over the roast in the crockpot.
  • Scatter the pepperoncini peppers over the roast and pour the reserved ½ cup of pepperoncini juice on top.
  • Set the crockpot on low-heat and cook for about 10 hours.

Serving

  • After 10 hours, transfer the roast to a cutting board and shred the meat using two forks.
  • Carefully remove the pepperoncini from the crockpot with a slotted spoon and place them in a separate serving bowl.
  • Skim any excess fat from the cooking liquid and transfer it to a bowl.
  • Preheat your oven’s broiler.
  • Spoon some of the shredded beef onto the bottom half of each toasted hoagie bun.
  • Sprinkle shredded mozzarella cheese and broil until melted.
  • Spoon over some cooking liquid, top with pepperoncini, and place the other half of the bun on top.
