  • 2 lbs Lean Ground Beef
  • 1 large Yellow Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Tomato Paste
  • 2 teaspoons Dijon Mustard
  • 1 lb Short Cut Pasta
  • 2.5 cups Beef Broth
  • 2 cups Milk
  • 2 cups Sharp Cheddar Cheese (shredded) Add at the end of cooking

Instructions
 

Preparation

  • Start by placing a skillet over medium-high heat. Add the lean ground beef and begin to brown it, breaking it apart as it cooks.
  • Add the diced yellow onions to the skillet and cook for about one minute, then toss in the minced garlic, cooking for an additional 30 seconds.
  • Sprinkle in the paprika, salt, and pepper, and stir. Mix in the tomato paste and Dijon mustard until combined.

Cooking

  • Transfer the beef mixture to your Crockpot or slow cooker.
  • Add in the short-cut pasta, beef broth, and milk. Stir everything together until well combined.
  • Set the cooking time; for high setting, cook for 2 to 3 hours, or for low setting, 4 to 5 hours.

Finishing Touch

  • Approximately 15 minutes before the cooking time is complete, add in the shredded sharp cheddar cheese and mix until melted.
  • After cooking, check the consistency. If it's too thick, add more beef broth or milk until desired creaminess is achieved.

Notes

For a lighter option, serve on lettuce. Pair with crusty bread. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
