Main Ingredients

  • 3-4 pounds beef chuck roast Choose a good quality beef for tenderness.
  • 1 piece onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 4 cups beef broth Can use low-sodium for a richer flavor.
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 8 pieces sandwich rolls or hoagie buns Can substitute with ciabatta or baguette.
  • to taste Provolone or Swiss cheese Optional, for topping.

Instructions
 

Preparation

  • Place the sliced onion and minced garlic in the bottom of your crockpot.
  • Season the beef chuck roast with salt and pepper on all sides and place it on top of the onions and garlic.
  • Pour the beef broth, Worcestershire sauce, soy sauce, and dried thyme over the beef, ensuring most of the meat is covered.

Cooking

  • Cover the crockpot and cook on low for 8-10 hours or on high for 4-6 hours until the beef is tender and easily shreds.
  • Remove the beef from the crockpot and shred it using two forks, then return the shredded beef to mix with the juices.

Serving

  • Split the sandwich rolls and optionally melt cheese on top by placing them under the broiler for a minute.
  • Fill the rolls with the shredded beef mixture and serve hot with a small bowl of the cooking liquid for dipping.

Notes

For extra flavor, consider searing the beef before it goes into the crockpot. Experiment with various toppings and spreads like horseradish or garlic aioli.
