  • 2 cups vegetable broth Serves as the base of the sauce
  • 1 cup heavy cream Adds richness to the dish
  • 1 cup grated Parmesan cheese For cheesy goodness
  • 1 cup spinach Fresh or frozen spinach can be used
  • 2 cloves garlic Minced for flavor

Instructions
 

Preparation

  • Combine the vegetable broth and minced garlic in the crockpot, mixing well.
  • Add the frozen tortellini into the crockpot without thawing.

Cooking

  • Set the crockpot on low and cook for about 2 to 3 hours until the tortellini is tender.
  • Stir in the heavy cream and grated Parmesan cheese until a creamy sauce forms.
  • Add the spinach and season with salt and pepper.
  • Allow to cook on low for an additional 30 minutes to meld the flavors.

Serving

  • Serve warm in bowls, optionally topped with extra herbs or Parmesan cheese.
