Ingredients

  • 1.5 to 2 lbs boneless, skinless chicken breasts or thighs Chicken thighs may yield a juicier result.
  • 1 block cream cheese (8 oz) Cut into smaller chunks.
  • 1 cup salsa Choose based on preferred spiciness.
  • 1 packet taco seasoning Adds essential spices to the mixture.
  • 1 cup shredded cheddar cheese Can substitute with other cheeses.
  • Tortilla chips, for serving For serving.

  • diced tomatoes For garnish.
  • cilantro For garnish.
  • sour cream For garnish.
  • jalapeños For garnish.
  • green onions For garnish.

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts or thighs at the bottom of your crockpot.
  • Cut the cream cheese into smaller chunks and place it on top of the chicken.
  • Pour the salsa over the chicken and cream cheese.
  • Sprinkle the taco seasoning over the top.

Cooking

  • Cover the crockpot and set it to LOW for 4-6 hours or HIGH for 2-3 hours.
  • Once the cooking time is complete, shred the chicken with two forks directly in the pot.
  • Mix in the shredded cheddar cheese until melted and creamy.

Serving

  • Serve the creamy chicken mixture over a bed of tortilla chips.
  • Add optional toppings as desired and enjoy!
