Main Ingredients

  • 1 pound ground beef Browned before adding to slow cooker
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes Includes juices for additional flavor
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 4 cups beef broth Can substitute with vegetable broth for a lighter option
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust to preference

Preparation

  • Start by browning the ground beef in a skillet over medium heat. Drain any excess fat.
  • Transfer the cooked ground beef into your slow cooker.
  • Add in the black beans, kidney beans, and corn.
  • Pour in the diced tomatoes along with their juices.
  • Add the chopped onion and bell pepper.
  • Pour in the beef broth.
  • Sprinkle in the chili powder and garlic powder.
  • Season with salt and pepper to taste.
  • Stir everything together until well combined.

Cooking

  • Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, give the soup a good stir before serving.

Notes

Serve with cornbread or a sprinkle of cilantro and green onions on top. Can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
