Preparation

  • Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  • Add the wild rice on top of the chicken.
  • Dice the onion, slice the carrots, and chop the celery into small pieces. Add these to the crockpot.
  • Pour in the chicken broth, ensuring everything is covered.
  • Season with salt and pepper, and add any optional herbs.

Cooking

  • Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  • Check the chicken for doneness about 30 minutes before serving. Shred the chicken and return it to the soup.
  • Stir in the milk or cream and let it warm through for the remaining cooking time.
