  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup freshly squeezed lemon juice Adjust based on preference for citrus flavor.

  • 3 cloves garlic, minced
  • 2 tablespoons olive oil For searing the chicken.
  • 1 teaspoon dried oregano

Instructions
 

Preparation

  • Begin by seasoning the chicken breasts with salt and pepper on both sides.
  • In a skillet over medium heat, add olive oil. Sear the chicken breasts for about 2-3 minutes on each side until they turn golden brown.
  • In your crockpot, combine chicken broth, lemon juice, minced garlic, capers, and oregano. Stir well.
  • Once seared, transfer the chicken breasts to the crockpot and submerge them in the liquid mixture.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  • Once ready, shred the chicken into bite-sized pieces while in the crockpot, stirring well to coat it with the sauce.

Serving

  • Serve hot, garnished with fresh parsley and lemon slices.
