  • 4 pieces boneless, skinless chicken breasts Use thighs for extra tenderness.
  • 1 cup pesto sauce Choose high-quality store-bought or homemade.
  • 1 cup cherry tomatoes Halve or leave whole for added juiciness.
  • 1/2 cup mozzarella cheese Can substitute with dairy-free cheese alternative.

Instructions
 

Preparation

  • Place the chicken breasts at the base of your crockpot, arranged evenly.
  • Pour pesto sauce over the chicken, ensuring each breast is well-coated.
  • Add cherry tomatoes on top of the chicken.

Cooking

  • Cover the crockpot and choose cooking time: low for 6-7 hours or high for 3-4 hours.
  • About 30 minutes before serving, sprinkle mozzarella cheese over the chicken and tomatoes.
  • Cover again to allow the cheese to melt.

Serving

  • Serve warm, garnished with fresh basil if desired.
