  • 1 lb boneless, skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Preparation

  • Start by dicing the carrots, celery, and onion. Mince the garlic.

Cooking

  • In the crockpot, layer the chicken breasts, diced carrots, diced celery, onion, and minced garlic.
  • Pour in the chicken broth, ensuring the ingredients are submerged, and sprinkle in the dried thyme, oregano, salt, and pepper. Stir gently.
  • Select the low setting on your crockpot and cook for 6 to 8 hours or high for 3 to 4 hours.
  • Once done, carefully remove the chicken, shred it with forks, and return back into the soup.
  • Add the gnocchi to the soup, switch to high, and cook for an additional 30 minutes.
  • Stir in the heavy cream and fresh spinach just before serving.

Serving

  • Ladle the soup into bowls. Optionally garnish with fresh herbs or cheese.

Notes
