  • 2 pounds boneless, skinless chicken thighs or breasts
  • 4 medium sweet potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • Fresh parsley, for garnish (optional)

Preparation

  • Peel and dice the sweet potatoes, slice the carrots, chop the onion, and mince the garlic.
  • In a large bowl, mix salt, black pepper, dried thyme, and paprika. Rub this spice blend onto the chicken.

Cooking

  • Heat olive oil in a skillet over medium heat. Sear the chicken on both sides for 3-4 minutes.
  • In the bottom of your crockpot, layer sweet potatoes, carrots, and onions. Place the seared chicken on top.
  • Add minced garlic and pour the chicken broth evenly over everything.
  • Cover the crockpot, set it to low, and cook for 6-8 hours.
  • Once done, stir gently to combine, adjust seasoning, garnish with fresh parsley, and serve.

Notes

For a heartier meal, consider adding bell peppers or green beans. To enhance flavors, experiment with herbs like rosemary.
