  • 4 boneless skinless chicken breasts or thighs
  • 1 cup chicken broth
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika

Instructions
 

  • Prep the Chicken: Start by seasoning your chicken breasts or thighs with salt, pepper, thyme, rosemary, and paprika. Be generous with the seasoning to really bring out the flavors.
  • Sear (Optional): For an extra layer of flavor, you can quickly sear the chicken in a hot pan with olive oil for 2-3 minutes per side before adding it to the crockpot. This step is optional but gives a nice golden finish to your chicken.
  • Add to Crockpot: Place the seasoned chicken into the slow cooker. Pour the chicken broth over the chicken and add the minced garlic. Drizzle with a little more olive oil to ensure the chicken stays moist as it cooks.
  • Set the Cooker: Cover the crockpot and set it to cook on low for 6-7 hours or on high for 3-4 hours. The longer you cook it, the more tender the chicken will be.
  • Check for Doneness: Once the cooking time is up, check the chicken with a meat thermometer. It should reach an internal temperature of 165°F (75°C). If you don’t have a thermometer, the chicken should easily shred with a fork when it’s done.
  • Serve: Once the chicken is cooked through and tender, remove it from the crockpot. You can shred it with two forks or serve it whole. The leftover broth can be used as a flavorful base for sauces or soups!
