Ingredients
  

Main Ingredients

  • 1 pound ground beef Use lean ground beef for less grease.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced Chop uniformly for even cooking.
  • 1 cup carrots, diced
  • 1 cup celery, diced

Dairy and Condiments

  • 1 cup cheddar cheese, shredded Feel free to substitute with other cheese types.
  • 1 cup milk
  • 2 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce

Seasoning

  • to taste Salt and pepper Adjust according to preference.

Optional Toppings

  • croutons For crunch.
  • additional cheese For extra cheesiness.
  • green onions Chopped, for garnish.

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks.
  • Add diced onion and minced garlic, cooking until the onion is translucent, about 4-5 minutes.
  • Transfer the beef mixture to the crockpot.

Cooking

  • Add beef broth, diced potatoes, carrots, and celery to the crockpot.
  • Stir in ketchup, Worcestershire sauce, salt, and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 15 minutes before serving, stir in milk and shredded cheddar cheese until melted.

Serving

  • Ladle soup into bowls and top with optional toppings if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to three months. Reheat gently, adding a splash of milk or broth if needed.
