Instructions
In a skillet over medium heat, cook the Italian sausage until browned and cooked through, about 7-10 minutes. Drain excess fat and set aside.
In the crockpot, combine the cooked sausage, diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth. Stir well.
Scatter the cubed cream cheese over the top, then cover and cook on low for 4-5 hours or high for 2-3 hours.
In the last 30 minutes of cooking, add the frozen tortellini and chopped spinach to the crockpot. Stir gently to combine.
Before serving, taste and adjust seasoning with salt and pepper as needed.
