Ingredients
  

  • 1 lb Italian Sausage Mild or spicy
  • 1 package Frozen Cheese Tortellini 19 oz
  • 4 cups Fresh Spinach Chopped
  • 1 can Diced Tomatoes 28 oz, undrained
  • 1 block Cream Cheese 8 oz, cubed
  • 4 cups Chicken Broth
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Italian Seasoning

Instructions
 

  • In a skillet over medium heat, cook the Italian sausage until browned and cooked through, about 7-10 minutes. Drain excess fat and set aside.
  • In the crockpot, combine the cooked sausage, diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth. Stir well.
  • Scatter the cubed cream cheese over the top, then cover and cook on low for 4-5 hours or high for 2-3 hours.
  • In the last 30 minutes of cooking, add the frozen tortellini and chopped spinach to the crockpot. Stir gently to combine.
  • Before serving, taste and adjust seasoning with salt and pepper as needed.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stove.
