Ingredients
  

Main Ingredients

  • 2 cups broccoli florets Fresh or frozen
  • 2 cups cooked chicken, shredded Rotisserie chicken works great
  • 1 cup rice Can use white or brown rice
  • 4 cups chicken broth Low-sodium recommended
  • 1 cup cheese Cheddar or your choice

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Start by ensuring your crockpot is clean and lightly grease the inside with cooking spray or oil to prevent sticking.
  • Add the shredded chicken to the bottom of the crockpot.
  • Pour in the uncooked rice, followed by the chicken broth.
  • Sprinkle in garlic powder, onion powder, salt, and pepper, then stir well to coat.

Cooking

  • Cover the crockpot and cook on low for 4 to 6 hours, or until the rice is tender.
  • Thirty minutes before the cooking time ends, stir in the broccoli florets.
  • Once the rice and chicken are fully cooked, sprinkle cheese over the top and cover until melted.
  • Stir everything together until the cheese coats the chicken and rice evenly.

Serving

  • Scoop into bowls or onto warm plates, optionally topping with extra cheese or fresh herbs before serving.

Notes

For added flavor, consider using pre-cooked chicken and don't overcook the broccoli to keep it vibrant. Serve with a side salad or crusty bread for a complete meal.
