  • 4 pieces chicken thighs Hearty and juicy
  • 2 cups cherry tomatoes Adds sweetness and color
  • 1 cup spinach Fresh for texture and nutrition
  • 1/2 cup heavy cream For a creamy sauce
  • 1/2 cup grated Parmesan cheese To sprinkle on top
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Olive oil For searing the chicken

Preparation

  • Heat a splash of olive oil in a skillet over medium heat.
  • Sear the chicken thighs on both sides until they develop a golden-brown crust.
  • Transfer the seared chicken to the Crock-Pot.
  • Add the cherry tomatoes, spinach, and minced garlic to the Crock-Pot.
  • Sprinkle the Italian seasoning, salt, and pepper over the ingredients.
  • Pour the heavy cream over the chicken and vegetables.
  • Sprinkle grated Parmesan cheese on top.

Cooking

  • Cover the Crock-Pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, serve while warm and garnish with additional Parmesan cheese if desired.
