Ingredients
  

Casserole Layers

  • 32 ounces frozen tater tots Used as the base and topping.
  • 1 pound ground beef (80/20) Can substitute with ground turkey or chicken for a lighter option.
  • 1 medium yellow onion, diced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 cup milk (whole or 2%)
  • 10.5 ounces canned cream of mushroom soup or cream of chicken soup For added creaminess.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 cup frozen mixed vegetables (corn, carrots, peas, green beans) Feel free to swap in your choice of vegetables.
  • 2 cups shredded cheddar cheese Consider mixing varieties for a flavor twist.

Instructions
 

Preparation

  • Start by spraying the bottom of your crockpot with nonstick cooking spray.
  • Evenly spread half of the frozen tater tots in the bottom of the crockpot.
  • In a skillet over medium heat, add the ground beef along with the diced onion. Season with kosher salt and black pepper. Cook until the beef is no longer pink, crumbling as it cooks.
  • Drain excess grease and transfer the beef and onion mixture to a mixing bowl.
  • Add milk, canned cream of mushroom or chicken soup, Worcestershire sauce, garlic powder, and frozen mixed vegetables to the bowl, stirring until well combined.
  • Spread the beef mixture evenly over the layer of tater tots in the crockpot, followed by half of the shredded cheddar cheese.
  • Layer the remaining tater tots on top and finish with the rest of the cheddar cheese.

Cooking

  • Cover the crockpot with the lid, setting it to cook on high for 3-4 hours or on low for 6-8 hours.

Notes

For extra crispiness, consider pre-baking the tater tots slightly. You can prepare it ahead of time and store the ingredients in the refrigerator until ready to cook. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for 2-3 months.
