Ingredients
  

Main Ingredients

  • 2 lbs chicken breast, cut into bite-sized pieces Use fresh chicken for best results
  • 1 cup pineapple chunks (canned or fresh)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, diced

Sauce Ingredients

  • 1 cup sweet and sour sauce Store-bought or homemade
  • 2 tablespoons soy sauce Use tamari sauce for gluten-free version
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For Serving

  • Cooked rice Serve alongside the chicken

Instructions
 

Preparation

  • Place the bite-sized chicken pieces into the bottom of the Crock Pot, spreading them out evenly.
  • Chop the red and green bell peppers, and dice the onion.
  • Add the pineapple chunks on top of the chicken.
  • Layer the chopped bell peppers and diced onion on top.

Sauce Preparation

  • In a medium bowl, combine the sweet and sour sauce, soy sauce, garlic powder, salt, and pepper. Mix well.
  • Pour the sauce over the chicken and vegetables in the Crock Pot, stirring gently to combine.

Cooking

  • Cover the Crock Pot with the lid and set to cook. Choose between cooking on low for 4 to 6 hours or high for 2 to 3 hours.
  • Check that the chicken is cooked through and tender before serving.

Serving

  • Serve the sweet and sour chicken over fluffy cooked rice.
  • Garnish with chopped green onions or sesame seeds for visual appeal.

Notes
