  • 1 green bell pepper, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced Don’t skip the garlic for depth of flavor.
  • 14.5 ounces can diced tomatoes Add with juice.
  • 1 cup chicken broth
  • 1 cup long-grain rice Long-grain rice recommended.
  • 2 teaspoons Cajun seasoning Adjust according to spice preference.
  • Salt and pepper to taste
  • 2 green onions, sliced For garnish.

Preparation

  • Gather all ingredients, ensuring chicken is diced and sausage is sliced.

Cooking

  • In the crock pot, combine chicken, sausage, onion, bell pepper, celery, and garlic.
  • Add canned tomatoes with their juice and chicken broth.
  • Stir in rice, Cajun seasoning, and season with salt and pepper.
  • Mix well and cover the crock pot.
  • Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • After cooking, stir gently and taste to adjust seasoning, adding more broth if needed.

Serving

  • Serve directly from the crock pot or ladle into bowls and garnish with green onions.
