A comforting dish that combines tender chicken breasts with the rich flavors of French onion soup, topped with Swiss cheese and fried onions.

Ingredients
  

Main Ingredients

  • 2 pounds boneless skinless chicken breasts, trimmed Can substitute with chicken thighs for added flavor.
  • 1 cup sliced onion For caramelization and flavor.
  • 1 ounce onion soup mix Use for flavor infusion.
  • 10.5 ounces condensed French onion soup Base for moisture and flavor.
  • 0.5 cup fried onions Add for texture; layer on top before serving.
  • 2-3 slices Swiss cheese Melt over chicken for added creaminess.
  • to taste Fresh parsley For garnish.

Preparation

  • Lightly spray the inside of the slow cooker with non-stick cooking spray.
  • Place the trimmed boneless skinless chicken breasts in the slow cooker.
  • Layer the sliced onions evenly over the chicken.
  • Sprinkle the onion soup mix over the chicken and onions.
  • Pour the condensed French onion soup over the top.

Cooking

  • Cover the slow cooker and set it to cook on HIGH for 3 to 4 hours or on LOW for 4 to 6 hours.
  • About 30 minutes before the cooking time is complete, add the fried onions on top of each chicken breast.
  • Place 2-3 slices of Swiss cheese on each piece of chicken and cover again.
  • Once cooked, remove the lid and sprinkle fresh parsley over the chicken.

Notes

For a deeper flavor, you can sauté the onions before adding them to the slow cooker. Feel free to experiment with different cheeses or add vegetables like mushrooms or bell peppers.
