  • 2 pounds boneless, skinless chicken breasts
  • 2 cups heavy whipping cream
  • 4 cups chicken broth
  • 4 tablespoons butter
  • 2 tablespoons Cajun seasoning
  • ½ teaspoon garlic powder
  • 1 pound penne pasta
  • 1 cup grated Parmesan cheese

Preparation

  • Prep all your ingredients. Optionally, chop vegetables like bell peppers or spinach into bite-sized pieces.
  • In a 6-quart crock pot, combine the chicken breasts, heavy whipping cream, chicken broth, and butter.
  • Sprinkle in the Cajun seasoning and garlic powder, and stir together until well mixed.

Cooking

  • Cover the crock pot and cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken reaches 165°F.
  • Remove the chicken from the crock pot and shred it using two forks.
  • Return the shredded chicken back to the crock pot and whisk the sauce until smooth.
  • Add the uncooked penne pasta, stirring it into the sauce.
  • Cover and cook on high for an additional 20 to 30 minutes until the pasta is tender.
  • Stir in the grated Parmesan cheese until melted and well incorporated.

Notes
