Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 8 oz pasta (penne or rotini)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts in your crock pot, arranged evenly.
  • Add the diced bell pepper and onion around the chicken.
  • Sprinkle the minced garlic over the ingredients, followed by the Cajun seasoning, salt, and pepper.
  • Pour in the chicken broth.

Cooking

  • Cover the crock pot and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  • Once the chicken is fully cooked and tender, remove it from the pot and shred it using two forks.
  • Return the shredded chicken to the crock pot.
  • Pour in the heavy cream and add the pasta.
  • Stir everything together to combine and cover the crock pot again.
  • Let it cook on high for an additional 20-30 minutes until the pasta is tender.

Serving

  • Stir everything one last time and transfer to a serving bowl.
  • Garnish with chopped parsley and serve.

Notes

Consider substituting chicken breasts with thighs for richer flavor. Adjust cooking time for different pasta types.
