Ingredients
  

For the Soup Base

  • 1 pound chicken breasts Bone-in chicken can be used for richer flavor.
  • 1 cup rice White rice preferred, but can substitute with brown rice (adjust cooking time).
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme Can add fresh herbs for more flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup peas (optional) Add towards the end of cooking.
  • 1 tablespoon lemon juice (optional) Adds brightness.

Instructions
 

Preparation

  • Lay the chicken breasts at the bottom of your crock pot.
  • Add the rice on top of the chicken.
  • Pour in the chicken broth, covering the ingredients.
  • Add the chopped carrots, celery, and diced onion.
  • Stir in the minced garlic, dried thyme, salt, and black pepper.
  • Mix everything thoroughly to combine well.
  • Cover the crock pot and cook on low for 6 to 8 hours, or on high for 4 to 5 hours.

Finishing Touch

  • About 30 minutes before serving, shred the chicken right in the pot.
  • If using peas, add them along with lemon juice.
  • Ensure everything is heated through before serving.

Notes

Store any leftovers in an airtight container. For freezing, transfer to freezer-safe containers and leave space for expansion. Reheat on the stove or microwave with a splash of broth or water if needed.
