Main Ingredients

  • 2 pieces chicken breasts Use boneless for easier shredding
  • 1 cup pasta (penne or rotini) Cook according to package instructions
  • 1 cup diced bell peppers Fresh is best for flavor
  • 1 cup diced onions Fresh onions preferred
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth Low-sodium recommended
  • 2 tablespoons Cajun seasoning Adjust to taste
  • 1 cup heavy cream For a rich flavor
  • to taste Salt and pepper
  • for serving Grated Parmesan cheese Optional garnish
  • for garnish Fresh parsley Add for color

Instructions
 

Preparation

  • Layer the chicken breasts at the bottom of your slow cooker.
  • Add the diced bell peppers, onions, minced garlic, diced tomatoes, chicken broth, and Cajun seasoning to the slow cooker.
  • Stir everything together gently.

Cooking

  • Cover and set the slow cooker on low for 5-6 hours or high for 3-4 hours.
  • Cook pasta according to the package instructions about 30 minutes before serving.
  • Shred the chicken in the slow cooker after the cooking time is complete.
  • Stir in the heavy cream and cooked pasta until well combined.
  • Taste and adjust the seasoning with salt and pepper as needed.

Serving

  • Serve hot, garnished with grated Parmesan cheese and fresh parsley.
