Ingredients
  

For the Chicken and Sauce

  • 1 lb boneless, skinless chicken breasts Use thighs for more moisture.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning Adjust quantity for spice preference.

For the Pasta

  • 2 cups pasta (penne or rotini)

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of your crock pot.
  • Sprinkle the chopped onion, bell pepper, and minced garlic over the chicken.
  • Add the chicken broth and heavy cream over the mixture.
  • Sprinkle Cajun seasoning, salt, and pepper evenly over the dish.

Cooking

  • Cover the crock pot with its lid and set it on low heat. Cook for 4 to 6 hours, or until the chicken is cooked through and tender.
  • Carefully remove the chicken breasts from the pot and shred into bite-sized pieces.
  • Return the shredded chicken back to the pot.

Pasta Preparation

  • While the chicken is cooking, bring a large pot of salted water to boil. Cook the pasta according to package instructions until al dente, then drain.

Combine and Serve

  • Add the cooked pasta to the crock pot, stirring to combine well.
  • Serve warm, garnished with fresh parsley.
