  • 1 pound carrots, peeled and cut into thick sticks Fresh, firm carrots work best.
  • 3 tablespoons olive oil For drizzling over the smashed carrots.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme Or any favorite herb.
  • to taste Fresh parsley for garnish Optional garnish.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Bring a large pot of water to a boil. Add the peeled and cut carrots and cook them for about 10 minutes, or until tender but not falling apart.
  • Drain the carrots and place them on a baking sheet lined with parchment paper. Allow them to cool slightly.
  • Using the bottom of a glass or a sturdy spatula, gently smash each carrot stick until flattened but intact, aiming for a thickness of about half an inch.

Cooking

  • Drizzle olive oil over the smashed carrots, ensuring they are evenly coated. Sprinkle salt, black pepper, garlic powder, and thyme on top.
  • Roast the carrots in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  • Remove the baking sheet from the oven and let the carrots cool for a few minutes. Garnish with fresh parsley before serving.

Notes
