Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the carrots.
  • Steam the carrots in a steamer basket over simmering water for about 10 minutes until slightly tender.
  • Drain the carrots and let them cool slightly.
  • Toss the cooled carrots with olive oil, salt, and pepper on a large baking sheet.
  • Using a fork or potato masher, gently press down on each carrot to flatten them to about half an inch thick.
  • In a small bowl, combine the melted butter with minced garlic and drizzle over the smashed carrots.

Cooking

  • Roast the carrots in the preheated oven for 20-25 minutes, flipping them halfway through.
  • Sprinkle fresh herbs over the top before serving hot, if desired.

Notes
