For the spring rolls

  • 10 sheets rice paper Thin rice paper for wrapping
  • 1 cup cooked shrimp, sliced in half lengthwise Can substitute with other proteins
  • 1 cup cooked chicken, shredded
  • 1 cup firm tofu, sliced into strips For a vegetarian option
  • 2 cups mixed lettuce leaves, shredded Fresh greens for crunch
  • 1 cup grated carrots Adds sweetness and color
  • 1 small cucumber, julienned Provides a refreshing crunch
  • 1 each avocado, sliced Optional, for creaminess
  • fresh herbs (mint, cilantro, or basil) For added flavor

For dipping sauce (optional)

  • peanut sauce or sweet chili sauce Choose your favorite sauce

Instructions
 

Preparation

  • Start by preparing your ingredients and ensure all fillings are ready to go.
  • Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 15 seconds or until pliable, but not overly soft.
  • Lay the softened rice paper on a clean, dry surface.
  • Place your choice of fillings in a line across the center of the rice paper, leaving about an inch on both sides.
  • Start rolling the rice paper tightly from the side closest to you, fold in the sides, then continue rolling until you have a snug cylinder.
  • Repeat this process with the remaining rice paper sheets and fillings.

Serving

  • Once rolled, place the spring rolls on a plate seam side down. Serve immediately with dipping sauce or store for later.

Notes

These rolls can be personalized with various fillings. Be careful when soaking rice paper to prevent tearing. Store wrapped in plastic wrap in an airtight container in the fridge for up to two days for best freshness.
